Not on the default setting. "Keep paragraphs" treats a blank line as a paragraph break and only joins the broken lines inside each one. Choose "Everything on one line" if you genuinely want it all flattened.
A PDF stores where each line sits on the page, not where sentences end. Copying it gives you a hard break at the end of every visual line, which is why the text looks shredded when pasted.
Yes — collapsing runs of spaces and trimming each line are both optional and on by default.
